Well, I’m suppose to be enjoying my second to last day in Texas today but since my grandpa passed away his funeral ended up being last Friday – causing my trip to be postponed. But the amazing thing about it being postponed is that I can see God’s hand in it all! First, the tickets – since it was because of the death of my grandpa that we had to reschedule the fee’s are being waived. Second, since we’re going later in September new tickets were cheaper then going the originally planned dates. Third, my girlfriend who is also going got TERRIBLY sick on Thursday – when we were suppose to be flying! Poor thing was so sick she couldn’t even make it home without pulling over her car! And fourth – well neither of us were mentally ready which means it would have been a mad dash to get life in order on time! I am thankful that God orchestrates my life and that I can see his blessings even when I think it’s not!

Ok, enough with that! On with the Menu Plan! These are just my main dishes. I always have sides on hand so I’ll pick whatever sounds good that day. (Unless otherwise planned of course)

Monday: Pork with Apples served with Asparagus

Tuesday: Potluck Dinner at Bible Study (Bringing Cookies)

Wedensday: Pasta w/Alfredo Sauce

Thursday: Sweet Taco’s

Friday: Roast Pork Tenderloin

Saturday: Enchilada Casserole

Sunday: Left Overs

Keep an eye out about my recipes to be posted soon. I am planning to get them posted and organized in a way so that you can find them easily if you ever come back to reference them! (I’m telling you so that I am accountable! It’s been on my list of to-do’s for a while now!)
